Starting over 6 years ago Merlo Ristorante opened, sharing with Chicago the most authentic Bolognese cuisine and culture found in the city. Today, Merlo has grown into a family of three restaurants, each offering a different style of Bolognese cuisine, service and atmosphere. The one aspect that is consistent throughout is that they all are built upon the same general concept, to serve dishes comprised of only the finest and freshest of ingredients, in at atmosphere of understated elegance and professional service.

Merlo on Maple
Merlo on Maple offers an upscale and sophisticated atmosphere for fine dining. Located in the heart of the Gold Coast, this 4-story mansion built in the late 1800's, boasts three floors of dining rooms offering three unique spaces perfect for an intimate gathering, special occasions and private business dinners. Merlo on Maple's seasonal preset menus are created from the most sophisticated recipes of the Bolognese cuisine. To enhance your dinner, we offer an extensive wine list focused around the intricate flavors of these dishes.

Merlo la Salumeria
La Salumeria del Merlo, our original location, has been a favorite of Lincoln Park residents for over 8 years. Flanked with painted yellow ochre walls, one is reminded of the sun-baked stone buildings throughout Italy. With a wide and expansive back dining room that can accommodate parties of up to 80 people, it is a great space for wedding receptions, social gatherings and festive parties. The seasonal preset menus at "La Salumeria" are a refined and simplified take on the Bolognese cuisine, featuring an array of homemade traditional filled pastas, home to Bologna, paired with organic meats and wild fresh-catch fish entrees.
