The lighter colors on many offerings here, like the buttery yellows and muted greens of an artichoke celery and parmigiano salad, are the first indication these are not scenes from your typical Italian restaurant.
But all are classics in their own right from Emilia, a northern region featuring butters and creams often called the capital of Italian cuisine.
