The concept of this restaurant has been a dream of our family for many years. The idea was born from the conviction that "the authentic cuisine from Bologna and Emilia Romagna region" where we are from can be very interesting for a large number of Americans who had the chance to experience Italy and its food in person, as well as others who are curious to taste it without having to undertake a long trip. We have organized our kitchen strictly following the concepts known in Europe as "Slow Food" which can be concisely summarized as follows:

PRODUCT SELECTIONS
We only select first quality products using a standard of selection based on freshness; in fact we use mostly seasonal products. We purchase our products daily from small producers rather then from industrial sources. These are not frozen and are produced with the old traditional methods, thus allowing the food to maintain the flavors and the taste, which one would experience when enjoying a home cooked meal prepared in a home in Bologna.

Further, the reduced capacity of Merló Ristorante and Merlo on Maple (90 seats) allows us to prepare and cook every dish at the moment of ordering; thus, allowing us to offer to our guests flavors and perfumes at the moment of their maximum integrity.
